Pesto Recipe

Ingredients

  • 1/2 cuptoasted pine nuts (I usually use walnuts)
  • 2 tablespoonsfresh lemon juice
  • 1small garlic clove
  • 1/4 teaspoonsea salt
  • freshly ground black pepper
  • 2 cupsbasil leaves
  • 1/4 cupextra-virgin olive oil, plus more for a smoother pesto
  • 1/4 cupfreshly grated Parmesan cheese

Instructions

    Toast the nuts a little bit. And then pulse them in the food processor

    Add all the ingredients (except the olive oil and parmesean cheese). Pulse a few times till its all mixed up

    With the food processor running, add the olive oil in a stream till its combined.

    Now add in the parmesean cheese and pulse till its all mixed up. Taste and adjust the seasoning accordingly
