Ingredients

  • 1cucumber cut into pieces
  • 1tomato cut into pieces
  • 1green bell pepper thinly sliced
  • 4kalamata olives pitted and chopped
  • 1/2red onion thinly sliced
  • Sheep's milk Feta cheese cut into cubes
  • Olive oil
  • Oregano seasoning
  • Lemon juice
  • Salt to taste

    Mix the cucumber, tomato, green bell pepper, kalamata olives, onion and feta cheese together. Sheep's milk feta cheese is really important, its a high quality cheese that has a very fresh taste, it will be very different from the cows milk feta. Sprinkle with salt and mix well. Now add the olive oil, lemon juice and mix everything really well. You can store this in the fridge until you are ready to server. When you are ready to serve, give everything another mix and sprinkle the finely crushed oregano on top.
